I wait until my game is over then select the plays I want to be highlights from there. I only play online so thats where my highlights are from.

You might be making my mistake, you need to sign in to EA before your start the game. You can then upload direct to your profile.

when you score, press X for instant replay .. then press Y for uploading the video .. the video should be uploaded on your profile.
